The seasons

If you let nature run its course, beautiful things can happen.

We follow the seasons. From day to day. From week to week. With micro seasons that sometimes last only a few days: flowers, young shoots and soft leaves. And plants that are at the base of our menu. Like the almost infinite amount of linden leaf, asparagus and chestnut.

Garden of Eden.

The fruits nearly fall from the trees by itself.
Tubers, roots, nuts, pears and plums. Apples, berries, chestnuts and szechuan peppers.

Fresh flavors arise.

Flowers, shoots, buds.
The first wild garlic, young leaves on the trees and green pine tops that taste like lemon.

Young vegetables are getting bigger.

A treasury of flavors.
Summer beets and summer cabbage, plenty of day lilies, Chinese mahogany and rose petals.

Short days and long aftertaste.

The land is getting ready for hibernation
We preserved the abundance. Pickled vegetables, mushrooms, dried berries and pine needles.
